A half-baked bittersweet dark chocolate cake with a molten pistachio cream center and crispy toasted puff pastry shards for crunch. Soft and rich on the palate, melting and runny at the center, crunchy by surprise: an individual decadent cake that brings three textures together in one spoonful.

Pairing intense dark chocolate with sweet, fresh pistachio was an obvious match. And for the pistachio cream filling the center, we use our own cream, also available in jars for at-home use.

Just like in our restaurants

Remove the paper mold around the fondant, then reheat it for about 20 seconds in the microwave (or 5 to 10 minutes in a 180 °C / 350 °F oven) to release the molten center. Best of all? Serve it with a scoop of vanilla ice cream: the warm-cold contrast between the cake and the ice cream is divine.

Handcrafted at our Atelier

All our fondants are handcrafted, in small batches, in our Chocolate Atelier in Greenfield Park, on Montréal's South Shore. They keep for 1 week in the fridge from receipt.

In the beginning, there was a brownie: the Intense Brownie!

Juliette says: “I used to make it at home for family and friends. It was such a hit that I started making it for Juliette & Chocolat and selling it in my restaurants. That’s how the Intense Brownie was born.”

The Intense Brownie is a fudgy square—dense, rich, and full of very fine Belgian chocolate. It remains our most popular classic: timeless and indulgent. It embodies everything that makes the perfect brownie: lots of chocolate (we use 55% semi-sweet dark chocolate), a melt-in-the-mouth texture, and a bake that’s just right—so it has a thin, crackly crust on top while the center stays soft.

You can enjoy it cold, or—if you prefer it even gooier—warm it for a few seconds in the microwave or a few minutes in the oven. Our tip: serve it warm with a scoop of vanilla ice cream!

This is our Spiced Pumpkin Guilty Chocolate Bar, with caramel and marshmallow: our autumn edition, indulgent to the core.

This seasonal Guilty Chocolate Bar marries the smoothness of Belgian milk chocolate at 33% cocoa with a delicately spiced pumpkin cream (cinnamon, nutmeg, ginger: the flavours that smell like autumn), a Breton salted butter caramel, and a homemade marshmallow that brings all its softness.

For an even more generous filling, all our Guilty Bars are cast and filled in domed molds: beneath the thin, snappy chocolate shell, discover a very, VERY indulgent centre, creamy and flowing.

The pairing of dark chocolate and hazelnut praline is a match made in heaven — the deep bitterness of cocoa softened by the caramelized roundness of hazelnut, in the great gourmet tradition of gianduja, revisited our way.
