New: the Apple Crumble Cake

There's grandma's apple crumble, warm and comforting, spooned straight from the baking dish. And then there's ours. Same fall spirit, same apple-cinnamon warmth, but built like a proper pastry cake. It's our new take on a Quebec classic, and it's exactly the kind of dessert you want at the centre of the table when the leaves start turning.

Five elements, one harmony

The build is layered in five parts, each with its texture and its role:

  • An oat sponge, tender and rustic
  • A Granny Smith apple compote, bright and tangy
  • An oat and cinnamon crumble, for the crunch and the aroma
  • A vanilla bavarois, airy and enveloping
  • A blond chocolate topping, caramelized and rich

The Granny Smith isn't a random pick: its clean tartness balances the sweetness of the bavarois and the sugar of the crumble. It's what keeps the cake bright on the palate, never heavy, even after a second slice.

A small chocolatier's touch: the blond chocolate topping brings caramel and shortbread notes that echo the cinnamon and oats without covering them. A quiet signature of the house.

Made at our Workshop

Like all our fresh cakes, the Apple Crumble Cake is made in small batches by our team of pastry chefs, at our Chocolate Workshop in Greenfield Park, on Montreal's South Shore. No shortcuts, no mass production. Artisanal pastry, one piece at a time.

Seasonal edition

This cake is seasonal: available while supplies last, for the length of fall. The Granny Smith, oat, cinnamon and blond chocolate combination won't come around again anytime soon.

How to order

Our fresh cakes are available for in-store pickup only, at our Workshop in Greenfield Park. Mousses, crumbles and bavarois don't travel well: it's the price of freshness.

  2. Pick up your cake at the Workshop within the timeframe shown at checkout.

Ideally, allow 24 to 48 hours in advance. For weekends and special occasions, a little earlier.

The Apple Crumble Cake is for 6 to 8 people. Bring it out on an October Sunday, cut generous slices, and finish it with a coffee or a tea. Fall gets what fall wants.
