New: the Spiced Pumpkin Guilty Bar with caramel and marshmallow

Fall isn't just a season, it's a state of mind. Orange leaves, afternoon coffees stretching a little later, wool sweaters back out of the closet, and above all, the arrival of spiced pumpkin flavours absolutely everywhere. We didn't resist for long. Our new fall Guilty Bar has landed at the Workshop, and let's be honest: it knows exactly what October should taste like.

Four flavours, four textures, one bite

Like all our Guilty Bars, this fall edition plays the accumulation game. Under the thin, crackling shell of 33% Belgian milk chocolate, a generous centre built in three layers:

• A delicately spiced pumpkin cream (cinnamon, nutmeg, ginger, the trinity of fall)
• A Breton salted butter caramel, for depth and contrast
• A homemade marshmallow, for the softness

Break the shell, let the centre flow a little, taste. This isn't a small treat, it's a full dessert packed into 130 grams.

Why it works so well

The 33% milk chocolate brings the sweetness that balances the warm spices without ever crushing their finer notes. The Breton caramel, with its hint of fleur de sel, keeps the recipe from tipping into pumpkin-spice cliché. The marshmallow, made by hand at the Workshop, adds that almost childlike texture that gives s'mores and comforting hot chocolates their charm.

This is our Juliette & Chocolat take on the star flavour of fall: more crafted, more layered, more intense.

Made by hand at our Workshop

Like everything we do, the Spiced Pumpkin Guilty Bar is made by hand, in small batches, at our Chocolate Workshop in Greenfield Park, on Montreal's South Shore.
