Juliette's Chocolate Madeleines
I love madeleines, and even more so if they're dipped in chocolate! I'm sharing my family recipe with you and hope you like it :)
Quantity: 12 madeleines
Preparation time: 10 minutes
Ingredients
- 100 g (3 1/2 oz) Sao Tome chocolate (or commercial 70% dark chocolate, cut into pieces)
- 120 g (1/2 cup) unsalted butter, cut into pieces
- 2 eggs
- 100 g (1/2 cup) caster sugar
- 80 g (1/3 cup) all-purpose flour
- 1 tsp baking powder
- 2 tsp pure vanilla essence
- Icing sugar (optional)
Preparation
- Preheat oven to 180°C (350°F).
- Pour the dark chocolate and butter into a saucepan. Heat over low heat, stirring until melted and smooth. Set aside off the heat.
- In a bowl, mix the eggs and sugar. Stir in the flour, baking powder, and vanilla essence, and set aside.
- Add the chocolate and melted butter and mix well until the mixture is smooth.
- Using two tablespoons, divide the mixture among the madeleine molds and bake for 15 minutes, or until a knife inserted in the center of a madeleine comes out clean.
- Let cool on a baking sheet, remove the madeleines from the molds and sprinkle with icing sugar when serving if desired.
Store at room temperature in an airtight container.
