We bake it in the Atelier at very high temperatures to create a crust with smoky caramel notes while the interior remains incredibly creamy . No biscuit base, no fuss .: just the best velvety, decadent cheesecake that melts in your mouth!


Why is this cheesecake so special??

At Juliette & Chocolat, we're already known for our rich brownies and chocolate fondues. But we love taking on new gourmet challenges.! Inspired by the pastries of the Basque coast , the San Sebasti á n cheesecake is distinguished by:

  1. A cooking "flash» – Bake at over 220° C allows the crust to set and the cheese's sugars to naturally caramelize, without adding a Cookies crust .
  2. An almost runny center – We use a blend of premium cream cheese, 35 cream%, fresh eggs and a touch of vanilla : result? A creamy texture, close to crème brûlée .
  3. A balanced taste – Light cheesecake tang, milky sweetness and a caramelized finish: each bite is a sweet surprise.

  • Carefully selected ingredients : as with our chocolates, we select local dairy products and eggs from free-range hens.
  • Gourmet craftsmanship : every step – from mixing to cooking to slow cooling – is carried out by hand in our Longueuil workshop.
  • Generosity : at Juliette & Chocolat, the portion is always “just a little more» than sufficient, for shared pleasure .

How to enjoy it?

  1. At room temperature – Take it out 15min before serving so that the center reaches its creamy peak .
  2. With a red fruit coulis – The acidity of the raspberries highlights the caramelized sweetness.
  3. Accompanied by a homemade hot chocolate – 70% for purists, or our famous praline milk chocolate for an ultra- comforting combination .
