S'Mores Brownie

For the biscuit base:

  • 200g graham crackers
  • 45g melted butter
  • 30g white sugar

For the brownie:

  • 120 g of flour
  • 1 pinch of salt
  • 225 g dark chocolate
  • 170g butter
  • 225 g white sugar
  • 80 g brown sugar
  • 3 eggs

For the top:

  • About twenty large marshmallows.
    (If you want to make them yourself, I suggest you follow my recipe here !)

Biscuit recipe:

1- Preheat oven to 350c.
2- Mix the breadcrumbs, melted butter, and sugar, incorporating the butter well into the dry ingredients.
3- Line a 9-inch square pan with ovenproof wax paper and crush the breadcrumbs into it, pressing them firmly into the bottom of the pan.
4- Pre-cook the base for 15 minutes then remove it from the oven (keep the oven hot for the rest).

Brownie recipe:

1- Over very, very low heat, melt the butter and chocolate in a large frying pan, then add the sugars and remove from the heat.
2- Break the eggs into the chocolate mixture and incorporate them.
3- Sift the flour and salt over the chocolate mixture and fold them into the mixture without beating it too much (otherwise the brownie will be too airy and not soft enough).
4- Spread the brownie mixture over the pre-baked biscuit base and bake for 30 minutes. Then remove from the oven and let cool to room temperature.

And finally:

1- Unmold the cooled brownie and place the marshmallows on top.
2- Bake everything at 300c for a few minutes to melt the marshmallows.
3- Using a torch, toast the tops of the marshmallows. If you don't have a torch, you can also place the brownie in the oven under a very hot grill, keeping a close eye on it.
4- Cut the brownies and enjoy. Careful, they stick!
