Lime & Ginger Blonde Brownie
This brownie is perfect for summer, it's rich and intense but also cool and refreshing thanks to the lime and ginger.
I love anything tangy, so I add a lime glaze on top!

Brownie ingredients:
- 4 eggs
- 140g butter at room temperature
- 250g of sugar
- 140g of white chocolate
- 150g of flour
- 30ml of 35% cream
- 100ml lime juice (the juice of about 4 limes)
- the zest of 4 limes
- 10g of grated fresh ginger.
Frosting:
- 200g icing sugar
- the juice of a lime
- the zest of a lime
1- Preheat oven to 350F. Grease and line a 9-inch square pan with parchment paper.
2- Melt the chocolate and butter together in a bain-marie or in the microwave.
3- Beat together the sugar and eggs.
4- Add the chocolate and melted butter to the sugar/egg mixture and mix well.
5- Add the cream, zest, lime juice, and ginger to the mixture.
6- Add the flour, mixing just enough to incorporate it.
7- Pour the mixture into the pan and bake. Bake for 30 to 35 minutes, until the top of the brownie begins to brown and is slightly cracked.
Once the brownie has cooled, frost it.
Icing Recipe:
Whisk together the icing sugar and lime juice, then stir in the zest.
Let the icing set, then cut the brownie and enjoy in the sunshine!
