This chocolate bar is made of luxurious and sweet 33% cocoa milk chocolate and a crunchy caramelized cookie.

We start by caramelizing the cookie: we make a liquid, golden caramel in which we dunk our cookies. Then, when the cookies are completely soaked through with caramel, we cook them until the caramel hardens and the cookies become crunchy and brittle. Finally, we pour our milk chocolate around the cookies.

This chocolate bar is made from our luscious 33% cocoa milk chocolate, and lots of crunchy chunks of caramelized hazelnuts.

To make this bar, you take shelled hazelnuts (hazelnuts that have had their skins removed), throw them in boiling caramel and make sure they are completely covered and shiny. Then you lay out the hazelnuts on a baking sheet and cook them in the oven to bring out their aroma and darken the caramel. 

Let the hazelnuts cool, then crush them up in little bits, and pour milk chocolate on top. You need lots of hazelnuts so there’s some in every bite.

This 33% cocoa milk chocolate bar is filled with luxurious Speculoos cookie paste.

Speculoos originally comes from Belgium, it’s similar to a gingerbread cookie flavored with cinnamon and cooked until it becomes crunchy. This chocolate bar is filled with a smooth paste made of these cookies. It’s delicious and, at least as far as we’re concerned, impossible to share!

This chocolate bar is made from 40% cocoa vintage milk chocolate that comes from a single plantation in Ghana.

For a milk chocolate it has an unusually high percentage of cocoa, and a rich and deep flavor profile, with natural hazelnut and caramel flavor notes that linger.

This chocolate bar is our version of the classic Florentine. We make it with our 56% cocoa dark chocolate, roasted almonds, liquid honey and crystallized orange peels.

To make sure all the nut and fruit flavors meld and combine with the dark chocolate, we make a roasted almond paste and we incorporate the honey and crystallized orange peels. We then lay out this paste into a flat cookie that we coat with dark chocolate.

Here is a purely indulgent chocolate bar: blonde chocolate filled with maple syrup cream fudge (homemade, of course!) and maple-roasted and sugared pecans. Yum!

Blonde chocolate is white chocolate that has been cooked at a low temperature for a very long time, giving it a golden color and a taste of caramelized biscuit.

After being poured into the mold, the blonde chocolate is topped with cream fudge, and chopped and oven-roasted pecans to bring out the flavor, and then cooked again in maple syrup until they take on a frosted appearance (this is called "sugaring" the nuts).

And as we wanted a packaging worthy of this unique bar, we collaborated with Montreal artist Whatisadam (WIA), who designed a colorful and fun illustrated case for us!
