Crinckle chocolate cookies

I spent part of my youth in the United States, where these cracked-looking cookies are a classic. The secret to the cracked surface is in the sugar they coat the cookies with before baking, which dries out the surface and makes it crack. This is the perfect chocolate cookie for afternoon tea, best enjoyed with a large glass of cold milk!


Ingredients

-125g of flour

-65g of cocoa

-1 teaspoon of baking powder

-1/2 teaspoon of baking soda

-1 pinch of salt

-1 teaspoon of vanilla essence

-120 g of chopped 65% dark chocolate

-325g of brown sugar

-3 eggs

-60g of butter

-100g of sugar

-65g of icing sugar

Recipe

1-Preheat oven to 325.

2- Mix the flour, salt, cocoa, baking powder, and baking soda in a bowl. In another bowl, mix the brown sugar, eggs, and vanilla.

3- Melt the butter and chocolate over very low heat (or in the microwave), then pour over the eggs and sugar, and mix well. Add the flour mixture and mix well.

4- Let the dough rest at room temperature until it hardens slightly and can be molded into balls. Meanwhile, prepare two bowls, one with granulated sugar and the other with icing sugar, as well as two baking sheets lined with parchment paper.

5- Make small balls of the biscuit dough, about 4 cm in diameter, and roll them in granulated sugar, then in icing sugar. Then place them on the baking sheet.

6- Bake for about 10 minutes, until the cookies are puffed and cracked. Let cool and enjoy!

Spiced Chai Hot Chocolate

I prefer dark chocolate, but the spices in the chai blend pair beautifully with white chocolate. It can be served hot or cold in the summer, and is best served topped with whipped cream.

 

Ingredients

-1l of water

-10 black tea bags

-50g of brown sugar

-1 tablespoon of honey

-a pinch of freshly ground nutmeg

-a pinch of freshly ground black pepper

-1 cinnamon stick

-8 cardamom berries

-3 anise flowers

-15 cloves

-1 tablespoon of orange zest

-1 tablespoon of vanilla essence

-a piece of fresh ginger a few centimeters long

-125ml of milk per person, multiply if necessary

-80g of white chocolate per person, multiply as needed

Recipe :

1- Bring the water to a boil, then remove it from the heat and add all the spices, tea bags, ginger, and orange zest. Let it steep for 20 minutes.

2- Strain the mixture, then add the sugar, vanilla, and honey, mixing well until the sugar has melted. Set this syrup aside.

3- In a saucepan, put the milk (125 ml per person), and the same amount of syrup. Add the chocolate, and melt over very low heat, whisking continuously.

4- To enjoy, pour into cups and garnish with whipped cream.

Healthy bars with nuts and dark chocolate

These no-bake sweet and savory bars are ideal for a snack on the go or a picnic. They easily fit in a backpack or lunch box and are a crunchy, delicious, and healthy snack.

 

Ingredients

-300g of almonds

-100g chopped pecans

-100g of peanuts

-50g of puffed quinoa

-2 tablespoons of flax seeds

-3 tablespoons of corn syrup

-3 tablespoons of maple syrup

-a teaspoon of vanilla extract

-170g of honey

-a large pinch of sea salt

-175g of 65% dark chocolate

Recipe :

1- In a large bowl, mix all the nuts, flax seeds, and quinoa.

2- In a small saucepan, combine the honey, both syrups, vanilla, and salt. Heat until the mixture reaches 126 degrees C.

3- Pour the caramel over the nuts and mix to coat them well.

4- Pour the nuts into a previously buttered 20cm x 20cm dish and pack them down. Then let them cool for half an hour.

5- Unmold, then cut into bars, and place them on wax paper.

6-Melt the chocolate in the microwave in batches, then drizzle it over the bars. These bars can be enjoyed or stored for up to a week in a tightly sealed container.
