Ingredients
For a 23 x 23 cm pan, or about 9 brownies:
- 225 g semi-sweet dark chocolate, about 55% cocoa
- 170 g salted butter
- 225 g white sugar
- 80 g brown sugar
- 4 eggs
- 1 tbsp vanilla extract
- 120 g all-purpose flour, sifted
Preparation
- Preheat the oven to 180°C / 350°F. Butter a 23 x 23 cm / 9 x 9 in pan and line it with parchment paper.
- In a small saucepan over very low heat, melt the chocolate and butter completely, stirring. Add the white sugar and brown sugar, then let them melt for a few minutes. Remove from the heat and let cool to room temperature.
- Add the eggs one at a time directly into the saucepan. Do not beat the mixture, to avoid incorporating too much air. Add the vanilla. Then add the flour, mixing only until the batter is smooth.
- Pour the batter into the pan. Bake for about 30 minutes, turning the pan halfway through baking. The brownie is ready when the edges are slightly puffed and crackled, but the center still moves a little.
- Let cool before unmolding and cutting into squares of about 8 cm. Or, if patience is not your greatest quality, eat it by the spoonful straight from the pan. We completely understand.
