Juliette's Chocolate Cookies
Who doesn't love chocolate cookies, that universal snack that inevitably brings back sweet childhood memories or pure moments of indulgence? A few ingredients are enough:
INGREDIENTS
- 2 eggs
- 100 g of sugar
- 60g unsalted butter, cut into pieces
- 200g of Sao Tome dark chocolate (or commercial 70% dark chocolate) in pellets or chopped
- 60 g all-purpose flour
- 3 g baking powder
- 60g chocolate chips
PREPARATION
- Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper and set aside.
- In a large bowl, whisk together the eggs and sugar. Set aside.
- In a saucepan, melt the butter and dark chocolate over very low heat. Pour over the eggs, mixing with a whisk.
- Add the flour and baking powder, stirring constantly, and fold in the chocolate chips. Mix well with a silicone spatula to combine the batter.
- Form 10 cookies using an ice cream scoop or two large tablespoons, and place them on the cookie sheet, leaving 5 cm (2 in) between each cookie.
- Bake for 10 minutes or until the cookies are well cracked and still very soft.
- Let cool completely on a wire rack before serving.
